
Gather
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- pinch of salt
- 1/2 teaspoon ginger
- 2 tablespoons butter
- 1/2 cup maple syrup
- 1 egg
- 1/2 cup sour cream
Icing:
- 1 cup confectioner's sugar
- 1/2 teaspoon softened butter
- pinch of salt
- 1/4 teaspoon vanilla
- 1/3 cup maple syrup
Go
- Preheat oven to 375 degrees F.
- Mix all muffin ingredients in a large bowl.
- Grease muffin tins with vegetable spray.
- Scoop batter by tablespoons into each muffin cup.
- Bake for 12 minutes.
- Beat together icing ingrediens until smooth. Add a little water if needed. Spread on muffins and enjoy!
